GRASS FED BEEF SKIRT is a long flat cut with a distinct fibrous texture that gives it a rough appearance. Traditionally the skirt was used to make a classic steak and kidney pie. More recently it has become a popular cut for the BBQ because of its intense beefy flavour. Skirt will respond well to an acidic marinade and can be seared at high temperatures and served rare or medium rare, although it can also be used for slow cooking. Cut against the grain to serve.
CHEEKS, OXTAIL, SKIRT AND ORGAN MEATS are removed on the day of slaughter, thus SKIRT is not dry-aged.
Packaged and labelled in a vacuum-sealed bag.
The lead time for this order will be 2-4 weeks. Upon payment we will schedule slaughtering and butchering, and dry-age the beef sides for a minimum of 14 days.
On occasion we have frozen GRASS FED BEEF SKIRT available for collection at the farm. If you want to skip the lead time and pick up a small order please get in touch with us first to see what is in store.
FREE DELIVERY is available with orders over $150 to Ayr, Giru and Townsville. We will contact you when your beef has been scheduled with the butcher and arrange a delivery/collection date. If delivery dates are not suitable for you, please arrange collection from the farm.

All our beef products come from locally-raised, grass fed, rotation-grazed cattle, grown without antibiotics, drenches or hormonal growth promotants.
We do not have organic certification. Our farming management focuses on enhancing the soil, water and biodiversity of grasses, in addition to the removal of the use of harsh chemicals, which is the main goal of organic certification. We encourage you to arrange a visit to St Margaret's Creek and ensure that we meet your standards.
